A cuisine that is clear, precise and respectful of the product, by Chef Naïn Gamboa

Naïn Gamboa, a Mexican-born chef born in 1991, sees cooking as a living, instinctive and constantly evolving language.

After graduating in international business, he discovered his culinary vocation while working in the restaurant business.

Determined, he trained in France, notably with Julien Allano, before enriching his experience in various Michelin-starred and gourmet establishments.

He joined Maison Kieny in Alsace in 2019, returning in 2022 as sous-chef, then becoming head chef in 2023. He accompanies a gentle transformation of the house, blending Alsatian tradition with Mexican influences, while valorizing local and seasonal products.

His cooking is clear, precise and respectful of the product, without overloading. It’s based on adaptation, observation, transmission, and a strong ecological awareness (fight against waste, full use of ingredients).

He champions a collaborative approach to cooking, listening to his team and his customers, and focusing on the overall guest experience.

A committed chef who listens attentively to his teams, he embodies the contemporary energy of the Maison, that of a place where excellence is accessible, where rigor rhymes with freedom, and where pleasure is always a matter of transmission.
